We have a bake sale tomorrow night for swim club, so tonight we decided to make cupcakes – gluten-free, dairy-free of course ;). They turned out quite well. They are more of a bread consistency than a cake consistency, but I had read reviews regarding that and was not terribly surprised. The kids loved the one that split into fourths :). The only downside was that the recipe we had only made 12 in a batch. But at least we know now :).
